Chistmas Cheese Balls

Try this great cheesy truffles recipe - perfect as a side snack for Thanksgiving or Christmas:

 —Ingredients—

8 ounces of cream cheese, softened.
8 ounces of medium cheddar cheese.
½ cup of butter.
3 tablespoons of brandy.
Chopped toasted almonds.

—Preparation— 

Using food processor, blend all ingredients except almonds until the mixture is smooth.

Shape the mix into suitably starsol sized balls and chill in refrigerator.

Before serving, roll the cheese truffle balls in the chopped almonds to coat.

Cranberry Salsa recipe

Something a little different for this Thanksgiving. It’s cranberry, but not as you know it!

Ingredient List:

2 ½ cups of fresh cranberries.
¼ cup of canola oil.
¼ cup of minced onion.
2 medium oranges.
1 minced serrano chili pepper.
1 tablespoon of minced ginger root.
1 tablespoon of minced cilantro.

Preparation Method:

Peel the oranges.

Remove the white from the oranges and discard.

Optionally, grate from of the orange peel to add to the salsa, discard any unused.

Combine all ingredients in a food processor.

Chill before serving.

Cherry Pie

There’s something really homely about the smell of a freshly cooked fruit pie. This cherry one always goes down well:

Cherry Pie ingredients:

1 nine-inch vanilla wafer pie crust.
4 cups of pitted cherries.
2 cups of whipped cream.
1 cup of white sugar.
2 tablespoons of cold water.
2 tablespoons of corn starch.
4 teaspoons of lemon juice.
¼ envelope of unflavored gelatin.
Whipped cream, to serve with.

Cooking method:

In a small bowl, soften the gelatin in the cold water. Set aside.

In a suitably sized saucepan, mash 2 cups (half) of the cherries with the white sugar. Next, add in cornstarch and lemon juice; stirring gently.

Cook over a medium heat, stirring until the mixture turns thick and transparent.

Remove from the heat and add the gelatin and stir.

Slice the other 2 cups of cherries into the crust, then pour the mixture over top.

Chill for 5-6 hours.

Serve with whipped cream.

Chocolate Muffins

Sometimes it’s difficult to find a snack that the whole family will like - but from my experience there are very few people who won’t eat chocolate muffins. Here is the recipe I use:

Ingredient List

2/3 cup of baking cocoa.
2 large eggs.
2 cups of flour.
1 cup of chocolate chips.
1/2 cup of sugar.
2 teaspoons of baking soda.
1 1/3 cups of milk.
1/3 cup of vegetable oil.
1 teaspoon of vanilla.
1/2 teaspoon of salt.

Procedure 

Preheat your oven to 400°F.

Coat muffin tins with non-stick cooking spray.

In a large bowl, combine the cocoa, flour, sugar, baking soda, salt and vanilla.

Stir in half a cup of chocolate chips.

In a separate bowl, combine the eggs and milk.

Add the egg/milk mixtute to the other ingredients until moistened.

Scoop the batter evenly into the prepared pan.

Sprinkle with the remaining chocolate chips.

Bake for about twenty minutes or until a toothpick inserted in the middle comes out clean.

Cool on a wire rack before removing from the pan.

Carrot Soup

I’ve loved carrots for as long as I can remember. When I was a kid, I used to watch Bugs Bunny munching on these bright orange sticks, and as children do, I ended up imitating. Here is a carrot soup recipe that is a little bit spicy: 

Ingredients

8 carrots, roughly chopped.
5 celery sticks, cut into pieces.
2 cloves of garlic, chopped.
1 large onion, chopped.
4 cups of water.
1 tablespoon of olive oil
1 teaspoon of curry powder.
Salt.

Cooking Procedure 

Heat up the olive oil in a frying pan; then fry the chopped garlic and chopped onion for 4-5 minutes.

Add a teaspoon of curry powder, then stir.

Add all of the remaining ingredients except the salt and cook until the vegetables are tender.

Mix in a blender until the soup is smooth.

Add salt to taste and serve.
